SUPER YACHT CHEF, ALAN FULLER
From the Spring of 1978 through to the end of Autumn 1979, I was employed as galley boy, then later as crew chef, onboard Motor Yacht Bernadette (47 mts) owned by Mr. Bernard Matthews. We cruised extensively in the Mediterranean and Caribbean during this time.
I then left yachting to pursue a career as a Chef de Cuisine and started an apprenticeship at the Strand Palace Hotel in London, which at the time had a 4* A la Carte kitchen. Shortly afterwards the hotel was re-structured and I left to continue at the Waldorf Hotel. I quickly worked my way through the kitchen hierachy and held the position of Chef de Partie Gardemanger, controlling and responsible for all the buffet work at the hotel. This included the design and production of butter sculptures and central decorated `chuad-froid´pieces, as well as running the larder section of a highly respected A la Carte operation.
In May of 1982 a call from a yacht Captain here in Palma, resulted in my return to yachting as Head Chef, on the 36 metre M.Y.Caribe III. It was the start of an association with the wealthiest dynasties of Mexico, that was to last for 24 years and take me all over the world.
During that time I went through the awesome and thrilling experience of being involved in the construction of 3 beautiful new yachts and then had the priveledge of working and living on them. I also had the honour and pleasure to prepare gourmet meals for a vast array of dignitaries, celebrities and Royalty.
The list of internationally renowned would be far too long to mention, but I will certainly include some of the most memorable…The King and Queen of Spain on eleven different occasions, often accompanied by their children, the Prince Philipe and the Princesses. King Constatine of Greece and his lovely wife were also annual visitors for about a decade. Former Presidents of Mexico were gifted long stays on the yachts and were a joy to work for. The now wealthiest man in the world, Señor Carlos Slim Helu, also had a vacation onboard ( I have since worked for him on his own yacht). . From the world of celebrity we had many revered visitors….Roger Moore and Michael Caine came to lunch together with their wives, while we anchored off Cap Jean Ferrat. Shirley Bassey came three times in Acapulco with her friends the Baron and Baroness di Portonova (he inherited a Texas oil empire worth about 20 billion dollars). Other prominent guests included Placido Domingo, Prince Hohenloe, Sir Jackie Stewart, James Hunt, Tony Ryan, Juan March, Patsy Hearst and many extremely wealthy men from the international business world.
The Mexican Connection sadly came to an end with the passing of the owners wife, shortly followed by himself a year later, in March of 2006.
I now work the summer season on a large yacht based in Puerto Portals (we cruise extensively, mainly in the Eastern-Med) and run a freelance operation in the winter months. This can include relief work on yachts, cooking courses and demonstrations and private lunch/dinner parties, larger functions can also be catered for with good notice,

reduction and a honey and mustard vinaigrette.

touch of green chilli ( optional ofcourse ), tossed in Oli Novell extra virgin
olive oil.
